Founded in 1865 by Ito Juushiro in what is now Daisen City, Akita Seishu renamed its sake Dewatsuru in 1913, expressing a wish that the sake of Dewa province would carry the elegance of a crane. The brewery brews exclusively with local Akita rice and pursues the philosophy that sake brewing starts from rice making, with rice for its flagship Yamatoshizuku line required to be grown within 10 km of the brewery. Snowmelt from the Dewa Hills provides the clear, soft water at the heart of each brew.
