Yamato Shizuku traces its roots to 1865, when the original Yamato Brewery was established in Akita Prefecture; the brand itself was launched in 1994 under the current name Akita Seishu. Built on a concept of hyper-local production, all rice is cultivated within a 10-kilometer radius of the brewery and the water is drawn from deep mountain springs in an area that was once an ancient seabed, giving the sake a distinctive minerality. The result is a light, balanced sake with elegant minerality and a subtle sweetness rooted firmly in the character of Akita's land.
