Daishinshu Shuzo was founded in Matsumoto, Nagano Prefecture, with brewing water drawn from a well 55 meters deep that captures snowmelt from the 3,000-meter peaks of the Northern Alps, water that has taken 30 to 40 years to filter through the earth. The brewery contracts with local farmers for 100% of its rice, using Nagano-born varieties, and pursues a philosophy rooted in the Shotoku Taishi teaching of harmony: accepting nature's gifts fully and responding with the full effort of human craft.
