Otani Shuzo, operating since 1872 in Kotoura Town on Tottori Prefecture's Daisen foothills, brews under the brand Takaisami, a name inspired by the soaring image of the hawk that captivated the brewery's founding owner. Two consecutive toji have been recognized as Contemporary Masters of Traditional Crafts and honored with the Yellow Ribbon Medal, reflecting generations of craft passed down through the Daisen snowmelt and locally grown sake rice.
