A cellar-reserve daiginjo aged five or more years at low temperature, with Yamada Nishiki polished to 35% and an alcohol of 17 degrees. Extended aging rounds the edges into a mellow, deeply aromatic sake that carries the mellowed richness specific to long-term cold storage.
