키쿠히메
1573년 이시카와현 하쿠산시에 창립된 키쿠히메는 쌀에 대한 타협 없는 고집으로 명성을 쌓았습니다. 양조장은 업계에서 보기 드물게 모든 주조용 쌀을 자체 도정하며, 이미 엘리트 특A 지역 중 최고 등급인 특별 AAA 지정 농지에서 재배한 야마다니시키만을 사용합니다. 활성탄 여과에 의존하지 않아 술 본연의 색과 깊이를 그대로 살려, 견과류·곡물·카라멜 향이 나는 묵직하고 숙성감 있는 표현을 완성합니다. 전통 杜氏 제도에 의존하지 않고 이 기술을 계승하기 위해 1980년대 사내 '사케 마이스터' 육성 프로그램을 시작하여 미래의 杜氏를 자체 양성하고 있습니다.
