Kikuhime Junmai Hiyaoroshi is a seasonal autumn release from Kikuhime Shuzo in Ishikawa, stored through the summer and released in the fall without a second pasteurization. Hiyaoroshi sake is known for its smooth, mellow maturity, having rounded out during warm-weather aging into a harmonious balance between freshness and developed complexity.
