Tsukinoi Junmai Ginjo Hiyaorosi is a seasonal autumn release from KK Tsukinoishuzouten in Ibaraki, brewed in winter and stored through summer before shipping in early fall without a second pasteurization. This single-pasteurization process, combined with summer maturation, develops a rounded, mellow character in this junmai ginjo that reflects the traditional hiyaoroshi seasonal bottling practice.
