Nanotsuki Namajukuseishu is an organic junmai that has undergone nama-jukusei, a maturation process in which the unpasteurized sake is aged at low temperatures. This technique allows the raw sake to develop complexity and depth while retaining the freshness associated with unpasteurized production.
