Yume no Kaori rice, a Fukushima original sake rice variety, is polished to 60% for this seasonal fresh junmai from Suehiro Shuzo, bottled as a temaezake (freshly-drawn sake) from the current pressing. Suehiro was founded in 1850 and operates under a three-rule code: Aizu water, Aizu toji technique, and rice grown on Aizu soil. Yume no Kaori is known for fresh, balanced aromatics.
