Daiginjo brewed with Yamada Nishiki polished to 40%, produced by Shimizu Shuzo in Sagamihara, Kanagawa. The brewery uses ultra-soft groundwater of just 2.4 hardness for its mash, and focuses on Yamada Nishiki from Hyogo Prefecture to achieve a refined, aromatic character.
