Shimizu Shuzo, founded in 1751 in Kanagawa Prefecture, has guided its brewing by the family motto of making and selling sake with care for over 270 years. The Iwaonoizumi brand is celebrated for its clear yet refined sweetness and rice-derived umami, and has earned five consecutive gold medals at Monde Selection from 1996 onward for both its Daiginjyo and Junmai Daiginjyo expressions. The brewery draws on traditional hand-crafted methods and continues to refine those techniques while maintaining the restrained, precise character that has defined the label across generations.
