Yutaka is a sake brand from Nakawashoten, a brewery located in Ikeda, Tokushima Prefecture, where the cold mountain climate and plentiful soft water create strong conditions for sake making. The brand name pays tribute to the brewery's longtime toji (master brewer), Ueta Yutaka, and all Yutaka expressions are unfiltered, designed from rice selection through to the press to showcase the sake as it emerges from fermentation. The brewery produces a full range from junmai to junmai daiginjo with an emphasis on approachable, drinkable sake, and exports small quantities to Taiwan and the UK including placement at Harrods.
