Wakazakari is the flagship brand of Nishibori Shuzo, a brewery founded in 1872 in Oyama, Tochigi Prefecture, housed in a building registered as a national tangible cultural property, and using natural spring water flowing from the Nikko mountain range. The brewery is notable for its experimental streak, having produced Japan's first clear-tank-fermented sake under a registered patent and an LED light-exposure fermentation series called Illumina, while its Monkadofuide label is distributed almost exclusively within Tochigi as an intentional gesture of local commitment.
