Wadachi

Wadachi is an aged sake produced by Asahi-Shuzo Sake Brewing in Nagaoka, Niigata, the same brewery behind the iconic Kubota label, founded in 1830. The name means wheel track in Japanese, evoking depth and direction accumulated over time, and the sake is aged for approximately three years at low temperatures of around 3 degrees Celsius. Unlike many aged sakes that develop heavy character, Wadachi is distinguished by its balance, maintaining a clean, integrated profile despite extended cellaring.
