Aihara Shuzo was founded in 1875 in Kure City, Hiroshima Prefecture, and its Ugonotsuki brand takes inspiration from the philosophy that after the rain, a radiant, clear moon brightens the sky and everything around it. The toji is a descendant of the Hiroshima Toji lineage, which pioneered soft-water brewing methods, and the brewery draws pure underground water from within the Seto Inland Sea National Park. Ugonotsuki is a consistent Gold Medal winner, recognized for its clean, transparent texture and fresh ginjo aromas that balance traditional Hiroshima softness with modern precision.
