Kinsen is produced by Aihara Shuzo, founded in 1875 in Nigata, Kure City, Hiroshima Prefecture, a town long recognized as a hub of sake brewing excellence. Under president Junichiro Aihara, who took leadership in 1988, the brewery adopted three guiding principles: brewing all products in the daiginjo style, keeping all products refrigerated, and sourcing only the best ingredients. The Kinsen Junmai Ginjo, originally a brand associated with Horimoto Shuzo and now crafted by Aihara, is recognized for its rich ginjo aroma and sharp, clean palate.
