Tsukinowa Shuzoten was founded in 1886 in Shiwa Town, Iwate Prefecture, the historical heartland of the Nanbu Toji guild of master brewers, and remains deeply committed to that tradition. One of the few breweries to use mochi rice in seishu production, it also extends its koji cultivation to two weeks or more, far beyond the industry norm. Under brewmaster Hiroko Yokozawa, one of Japan's pioneering female toji, Tsukinowa has earned recognition worldwide for its richly distinctive brewing style.
