Hayakawa Shuzoubu, the brewery behind Tenichi sake, was established in 1873 in Kawagoe, northern Mie Prefecture, building its identity on exclusive use of local ingredients: rice grown in Mie and water drawn from underground streams fed by the Suzuka Mountains. Every sake in the lineup is brewed without added alcohol or sugar, with undiluted sake extracted by natural dripping rather than mechanical pressing, a labor-intensive method that preserves the rice's inherent character. The brewery holds GI Mie certification, affirming its commitment to Mie's regional sake identity.
