Kawanishiya Shuzoten, founded in 1897 in Yamakita, Kanagawa Prefecture, produces all of its sake as pure rice junmaishu, a commitment that sets it apart from many Japanese breweries. Located at the foot of the Tanzawa mountains with access to abundant spring water and a cool climate, the brewery has developed a reputation for skillful use of the Yamahai fermentation method, producing sake with layered complexity and a food-enhancing acidity. Tanzawasan, born from the principle of oneness with food and collaboration with local rice farmers, is the brewery's signature brand, beloved across Kanagawa and nationally.
