Tadatada

Tadatada is produced by Takeuchi Shuzo, founded in 1744 in Ogaki City, Gifu Prefecture, a city celebrated as the water capital for its abundant, high-quality groundwater. In 2012, the ninth-generation brewer refocused the business entirely on sake production, ending wholesale operations and committing fully to crafting small-batch sake with rich flavor, clean finish, and lasting freshness. The brewery draws medium-soft groundwater from fifty meters underground and selects rice varieties from across Japan, including Yamada Nishiki, Omachi, and the Gifu-native Hida Homare.
