Shirayuki is Japan's oldest continuously brewed sake brand, tracing its origins to 1550 in Itami, Hyogo, the birthplace of clear sake, and has been carried forward by Konishi Brewing across fifteen generations of the founding family. The name, meaning white snow, was inspired by the second-generation brewery head's awe at a snow-covered mountain peak. Konishi's guiding philosophy, expressed as 'immutability,' holds that ceaseless innovation must coexist with an essential, unchanging nature, a balance reflected in a broad portfolio that spans traditional styles and new seasonal releases each year.
