Shichida was created in 2001 by the sixth-generation brewery owner Kensuke Shichida of Tenzan Sake Brewery in Saga Prefecture, intended from the start as a limited junmai brand distributed beyond the prefecture. Produced without water addition or charcoal filtration and stored at low temperature after a single pasteurization, the brand offers a calm, refined aroma balanced with rice flavor and clean acidity.
