Goto Shuzojo was founded in 1917 in Kuwana, Mie Prefecture, the historical gateway to the Ise Grand Shrine, and has operated with the same family as both owner and toji across generations. The brewery is a recognized member of GI Mie, crafting sake with Mie-grown Yamadanishiki and local Kaminoho rice, with an emphasis on drawing out the umami of the rice rather than pursuing showy aromatics. Their Seiun Junmai Daiginjo, made with Mie Prefecture yeast, has earned consecutive gold awards at national competitions.
