The name evokes the feeling of clear May skies after new buds have opened, and the sake is described as having bright acidity, gentle sweetness, and a firm umami suited to those sunny, refreshing associations. The brewery uses Okayama-grown sake rice including the traditional Asahi variety, a historic strain long associated with the region's paddy culture.
