Okuizumo Shuzo was established in 2004 in the Izumo mythological heartland of Shimane Prefecture, and produces exclusively junmai sake using 100% locally grown rice from Okuizumo Town, milled in-house by young Izumo-trained brewers. Its flagship One Drop series uses a single consistent brewing spec applied to different heritage sake rice varieties, inviting drinkers to experience how rice origin shapes flavor in the region's juicy, food-forward style.
