Nitamai is brewed by Okuizumo Shuzo in Shimane Prefecture's Okuizumo region, a mountainous area of the ancient Izumo Province long celebrated as one of the birthplaces of Japanese sake culture. The brand takes its name from the Nita-mai Koshihikari rice cultivated in the area, a locally grown variety prized for its quality that forms the foundation of the brewery's junmai lineup. Shimane's clear mountain water and cool inland climate provide ideal conditions for brewing sake with the depth and purity the region is known for.
