Oeyama is the flagship brand of Matsunami Sake Brewery, founded in 1868 in the Oku-Noto region of Ishikawa Prefecture, a district long recognized as the birthplace of the Noto Toji master brewing tradition. Now in its sixth generation, the family-run brewery performs virtually all production by hand, relying on techniques passed down through the generations rather than mechanization.
