Masaki Masamitsu Shuzojo is a small family brewery in Kitauwa, Ehime Prefecture, whose founder believed that quality water was the soul of good sake and dug a horizontal well on the property that continues to flow to this day. The brand name Nobushi (野武士, field warrior) traces back to a sumo-champion bull owned by the current president's grandfather. Since 2001, production has been entirely family-run, using water from the Shimanto River source and Ehime-grown rice, with a lineup ranging from junmai ginjo to a dry honjozo intended for everyday drinking.
