Mutemuka

Founded in 1893 in Shimanto Town, Kochi Prefecture, along the last clear river in Japan, Mutemuka takes its name from a founding philosophy of mushin mukan — remaining free from pretension and status, and making sake honestly from the land. The brewery uses contract-cultivated rice grown with organic fertilizer in the Shimanto basin and crafts its sake by hand, targeting the pure umami that only properly grown rice can yield. Mutemuka also produces Dabada Hiburi, a celebrated chestnut shochu, making it one of Kochi's most versatile craft producers.
