Koshinohatsume is the flagship brand of Takanoi Shuzo, located in Ojiya City, Niigata Prefecture, a region defined by its heavy snowfall. Founded in 1955, the brewery made history in 1987 as the first in Japan to attempt snow-aged sake storage, producing sake whose edges round and mellow within natural snow cellars. The brand centers on contract-cultivated local rice and the clean, soft water of the Ojiya region.
