Ishichi

Founded in 1716, Kumaya Shuzo is a fourteenth-generation brewery located in Okayama Prefecture, near the headwaters of the Takahashi River, drawing on artesian well water of exceptional purity. The Ishichi range is built around Omachi rice, the oldest heirloom sake rice variety cultivated almost exclusively in Okayama, which gives the sake its characteristic richness and full body. The brewery produces both junmai ginjo and tokubetsu junmai expressions from Asahi and Omachi rice, all benefiting from the softness of the mountain-fed well water.
