Nambu Sake Brewery, founded in 1733, has been brewing Hanagaki in Ono City, Fukui Prefecture since the sixth-generation master Teizo began sake production there in 1901. Ono is surrounded by mountains over 1,000 meters high, earning the nickname small Kyoto of Hokuriku, and its water was selected among Japan's 100 remarkable waters recognized by the Ministry of the Environment. The brewery grows its own Gohyakuman-Goku sake rice through organic farming in partnership with local farmers, and specializes in junmai sake, having won multiple Gold medals at the London Sake Challenge and awards at the International Wine Challenge.
