Echigozakura is produced by Echigozakura Shuzo, established in 1890 in Agano, Niigata Prefecture, and is one of the prefecture's most widely distributed labels, with its daiginjo available at supermarkets and convenience stores across Japan. The brewery specializes in ginjo brewing, using high-polish rice fermented slowly at low temperatures in the Niigata tradition to achieve a soft, clean, mildly fruity style; its daiginjo nama genshu earned three consecutive gold awards at the National New-Brewed Sake Contest from 2017 to 2019.
