Banshu Ikkon is produced by Sanyouhai Shuzo, founded in 1837 in Shiso City, Hyogo Prefecture, in a historic castle town along the Ibo River. The brewery uses soft underground water sourced from below Hyogo Prefecture's highest peak, Mt. Hyono, and sources rice exclusively from Hyogo varieties including Yamada Nishiki, Hyogo Kita Nishiki, and Hyogo Yume Nishiki. Banshu Ikkon holds the distinction of being the only brewery in the Kansai region to store sake in a mine, keeping a portion of production in the naturally temperature-stable Akenobe Mine for long-term aging.
