Taitenshiragiku is produced by Shiragiku Shuzo, founded in 1886 in Takahashi (Nariwa-cho), Okayama Prefecture, using water from the Takahashi River system and Okayama-grown rice including Omachi and Yamadanishiki, as well as rare heritage varieties the brewery has revived. Most notably, Shiragiku Shuzo is the only brewery in the world to have spent ten years reviving the sake rice variety Miki Nishiki, and it is the only producer fermenting this rice using kimoto with no added yeast. The brewery works exclusively with Okayama-produced rice and also cultivates the near-extinct variety Shiragiku, described as delivering balanced acidity, a soft mouthfeel, and the natural umami of the rice.
