明石鯛由兵庫縣明石市的明石酒類醸造手工小批量釀製，釀酒大師米澤公雄的家族在當地可追溯至1856年。品牌名向明石市的象徵——鯛魚致敬，鯛魚被譽為魚中之王，寄託了釀造清酒之王的雄心。自2005年開始出口以來，明石鯛在倉師賽、女性釀酒世界錦標賽及全美清酒大賞均摘得金獎，在英國、法國和美國積累了廣泛的國際聲譽。
