Yume is produced by Oumon Shuzo, a brewery with roots going back to 1790 in Shibata City, Niigata Prefecture, whose toji Tanaka Takeshi is one of only eight Zengiren Sake Meisters in Japan and a five-time consecutive gold medal winner at the National Sake Tasting Competition. The Yume series is fermented at low temperature for more than one year using only rice and rice koji, resulting in an elegantly sweet taste and rich fragrance. The brand exists alongside the brewery's flagship Oumon line, named after a European-inspired renaming by the fourth successor in the mid-1950s.
