Yoshinoyama is brewed by Yoshioka Shuzojo, a brewery established in 1789 in Kyotango City on Kyoto's Sea of Japan coast, now led by its eighth-generation master. The sake is shaped by hard underground water drawn from Mt. Kongodojisan, which drives a characteristically dry, crisp profile that pairs naturally with the abundant seafood of the Tango Peninsula.
