Nakamoto Shuzouten, founded in 1727 during the Kyoho era in Ikoma City, Nara, operates in the historic birthplace of sake brewing in Japan and maintains the brewery's guiding motto, Ippaku Nizo Sanjoji (first, polished white rice; second, a fine brewery; third, a skilled toji), as a measure of quality across all production. Since 2005, the brewery has brewed exclusively pure rice sake, with more than 99% produced to ginjo specifications. Beginning in the 2018 brewing year, Yamatsuru reformulated its blend ratios to retain the brand's characteristic depth while becoming more approachable to younger drinkers.
