Tomitsuru is produced by Aichi Shuzo (also known as Echi Shuzo), a brewery founded in 1869 in Aisho Town, Shiga Prefecture, that sources its brewing water from the Suzuka mountain system and has focused exclusively on the Tomitsuru brand since the early Showa period. The brewery relocated to secure ideal water quality and produces sake led by a traditional toji master brewer, with diverse flavor profiles across its lineup including the Daiginjo Matsu and Junmai Daiginjo Zuiun. Tomitsuru won Platinum Awards in both the Junmai Daiginjo and Junmai categories at the Kuramaster competition in 2021, along with a Judges' Special Award in the Junmai Daiginjo category.
