Asahi Shuzo, founded in 1830 in Niigata Prefecture and best known for its Kubota brand, produces Tokugetsu as a once-a-year seasonal junmai daiginjo released during the harvest moon period. The rice is polished over three days and nights with painstaking care to reach 28%, yielding grains whose pearlescent appearance inspired the name Tokugetsu, meaning special moon, and the result is a refined tanrei-karakuchi sake with an elegant aroma.
