Shujun is produced by Kawabu Jozo, a small brewery in Taki Town, Mie Prefecture, drawing brewing water from the Miya River system, considered one of the purest in Japan. The flagship Shujun, which accounts for roughly 80 percent of the brewery's output, is a standard jozo-shu (brewed sake) distinguished by its award-winning quality, having claimed Great Value Champion Sake honors at the International Wine Challenge against bottles priced five times higher. Kawabu also cultivates its own proprietary sake rice variety, Yuminariho, reflecting a farm-to-bottle approach rooted in Mie's heritage.
