Morimoto Shuzo in Kakegawa City, Shizuoka Prefecture traces its origin to 1887, and since the 2014 brewing year has produced exclusively junmai sake, eliminating all added distilled alcohol. The brewery is a self-brewing operation where the owner serves as toji, sourcing brewing water from the Kikugawa River fed by the Kurogane Ridge of the Southern Alps, and aims for a gentle, food-pairing style that does not tire the palate.
