Saijotsuru Sake Brewing has been operating on Sakagura Dori in Saijo, Higashihiroshima since 1904, and the brewery's original brick chimney remains in active use today, a rare survivor among the many that once defined the town's skyline. The brewery produces sake only during the coldest winter months, a practice that contributes to a clean fermentation and crisp finish across its range. Its flagship junmai daiginjo, Shinzui, is cold-matured for extended periods and has won Gold Medals at the Monde Selection for ten consecutive years.
