Hakuto Sake Brewery Co., Ltd. (Shirafuji Shuzoten) was established in the late Edo period in Wajima City, in the Okunoto region of the Noto Peninsula, Ishikawa, and has produced the Okunoto no Shiragiku brand as a small-batch, fully hand-crafted operation of around 100 koku. The brewery suffered severe structural damage in the January 2024 Noto Peninsula earthquake and has since resumed production through a collaborative arrangement with Yoshida Shuzo in Fukui Prefecture while rebuilding. The brand is built around the mountainous Okunoto identity, using locally grown Gohyakumangoku rice and the regional Kanazawa yeast.
