Toshimaya Shuzo was established in 1596 as a sake shop in Kanda, making it one of Tokyo's oldest sake institutions, with the current brewery in Higashi-Murayama producing the Okunokami brand for specialists and connoisseurs within the city. Okunokami is described as Tokyo's local brand, brewed with water drawn from a 150-meter-deep well and known for its rich aroma and complex flavor. Through centuries of rebuilding, including recovery from the 1923 earthquake and the World War II firebombings, Toshimaya has maintained an unbroken presence at the center of Tokyo's sake culture.
