Nango is brewed by Yazawa Shuzo, founded in 1833 in the Yamatsuri area of Fukushima Prefecture, using water from the Kuji River that runs through the surrounding hills. The brewery's philosophy centers on a gentler, less aromatic style that expresses pure rice flavor rather than fruity forward profiles, positioning Nango as the ultimate food-pairing sake with rich umami and comfortable acidity that sustains enjoyment throughout a meal. In April 2023, Yazawa Shuzo completed a new micro-brewing facility alongside a tasting room and cafe, expanding the brewery's role in its local community.
