Mourishuzo, founded in 1938 in Fukui City, produces two distinct lines under brewmaster Keisuke Mouri: Sari, whose name is Sanskrit for rice and echoes the Japanese word for sushi rice, and Mouri, a pure rice daiginjo made exclusively from Fukui Prefecture's Sakahomare rice. Sari has built a following among sushi and kaiseki restaurants across the Kanto region and is gaining traction in export markets in Southeast Asia.
