Kikuchi Sake Brewing, established in 1878 in the old merchant port district of Tamashima, Kurashiki, Okayama, brews its sake to the standard of umami with a clean finish using premium sake rice varieties including Yamada Nishiki and local Okayama Omachi, together with water from the Takahashi River system. The brewery is unusual in playing Mozart's music continuously in the fermentation room, a practice the brewery credits with a smoother texture. Kurashikikomachi is one of the brewery's clear sake expressions, rooted in this craft-focused Kurashiki heritage.
